A Taste of Italy


A simple and perfect dish we cooked while in staying in Italy, was Papardelle with Proscuitto Di Parma and a beautiful fresh Insalata Caprese.

The two dishes go hand in hand, and really did take me back to staying in our apartment in Sorrento on the Amalfi Coast. Simple, fresh flavours – all done in about 15mins. You couldn’t ask for a better warm Sunday afternoon meal.

Pasta Ingredients:

Fresh Papardelle

Baby Roma Tomatoes

Fresh Basil

A Brown Onion

Olive Oil


Salt and Pepper

Grated Parmesan

Insalata Caprese Ingredients:

Fresh Juicy Tomatoes

Fresh Basil

Buffalo Mozzerella

Olive Oil

Salt and Pepper


Papardelle Instructions:

Boil salty water in a large saucepan while you fry garlic, onion, olive oil in a large pan until it starts turning golden.

Lower the heat, add the fresh pasta to the boiling water, and add basil to the sauce.

Add tomatoes, proscuitto and cook for a few minutes.

Once the pasta has reached al dente, drain – and add to the large frypan. Stir through sauce with a teaspoon of water from the saucepan. Add a small amount of grated paremsan and serve garnished with basil and sprinkle of parmesan and cracked pepper.


Insalata Caprese Instrcutions:

Slice fresh tomatoes and Buffalo Mozzerella into slices about 1cm thick.

Pick Basil leaves, and begin to arrange placing the tomato down first, followed by the Mozzerella finishing with a piece of Basil.

Once completed – drizzle Olive Oil and cracked pepper to serve.
